This quinoa salad is one of my favourite ones.
It is so easy to make with lemon juice, fresh herbs, it's packed with flavour, loaded with plant-based protein so it's very filling.
*High in good Fats, Fibre, Calcium, Vitamin C, Potassium and Iron*
3 cups of cooked quinoa
1/2 cup freshly squeezed lemon juice (about 3 lemons)
1/4 cup extra virgin olive oil
1 cup minced scallions (white and green parts)
1 cup fresh dill, chopped
1 cup fresh flat-leaf parsley , chopped
1 large cucumber , chopped
1/2 red onion , chopped
1 large red pepper , chopped
10 olives, sliced
fine sea or Himalayan salt
fresh black pepper
Simply add all ingredients into a large bowl and mix well.
Allow the mixture to marinate for at least an hour before serving.
This salad can be served cold or at room temperature, and should keep in an airtight container in the fridge for up to 5 days.
